Quote 肉三鲜的制做方法 原料:猪肉末500克,(最好是前膀肉肥瘦比例7:3)海参丁100克,虾仁100克,炒好熟鸡蛋100克,韭菜末250克,植物油50克,酱油60克,高汤或者水150克,葱,姜末,盐,味精,鸡精,胡粉适量,(胡粉也可不放) 做法:将虾仁放在盒内,加少须酱油,盐,香油,味精,搅匀净放10分钟,猪肉放盒内放姜末,酱油,(可分3次加次加水或高汤,)搅匀,加盐,味精,鸡精,胡椒粉 和水,水可分几次加入,一边加水,一边用筷子朝一个方向搅动,待肉馅搅稀,肉质起粘性时,再加第二次,以此类推,肉馅吸足水有黏性时再静放20分钟,将海参丁虾仁丁,放入搅好的肉馅中,搅匀后再放菜,最后放葱花,香油,和炒好的鸡蛋末搅拌均匀即克。 此馅可以做水饺馅,包子馅,蒸饺馅,等。
